Macy's Southwest Chili

According to National Today, February 24th is National Chili Day. Since we are all about giving back to the community we thought it only appropriate to share a secret family recipe with our ELI Thrive family!

Macy Murray, our Coaching Coordinator, has been so kind to share her family’s Southwest Chili recipe. So guard this with your life and let us know how it turned out!

Ingredients:
2T veg oil
2lbs extra lean chili meat
2 medium onions
1/4 C flour
3 to 4 cloves of garlic
1 6oz can tomato paste
3 medium cans of diced tomatoes drained
6T red chili powder
2tsp ground cumin
1tsp oregano
5 C canned beef broth
3T cider vinegar
1T brown sugar
2 medium bell peppers
2 medium can beans (pinto or kidney)

Directions:
Brown & Drain meat. In a large dutch oven-heat oil, add chopped onion, saute until clear. Add flour-mix until paste. Add beef stock. Add all ingredients except bell peppers and beans. Simmer for 1.5 to 2 hours (bubbling not boiling). Add bell peppers and beans and cook another 30 to 45 minutes. Serve and top with cheese, sour cream, and crackers, or tortilla chips!
